Strong soup with amaranth and vegetables

INGIDIENTS:
150 g amaranth seeds
50 g butter
3 tbsp olive oil
5 dl vegetable soup
150 g carrots
200 g leeks
50 g nuts
parsley
1 teaspoon grated lemon peel
salt and pepper to taste

 RECIPES
Saute amaranth seeds with the butter and olive oil. Add vegetable broth and cook on gentle heat for 45 minutes. Clean and cut carrots and leeks into small cubes or circles. Roughly cut nuts and parsley. Add chopped vegetables to amaranth and cook for another 10 minutes. Then add a teaspoon of grated lemon peel, salt and pepper to taste. Lastly, add chopped walnuts and parsley.

Kohlrabi cream soup with amaranth

 INGRIDIENTS:
1.5 dl amaranth
1 kohlrabi with leaves
1 clove garlic
1 l of water
1 tablespoon vegetable soup
parsley
1 dl cream

 RECIPES:
Amaranth seed is lightly sauted  in olive oil, then add cubed kohlrabi with leaves. Add chopped garlic clove and pour water in. Add vegetables and herbs and cook until boiling. Reduce the fire and cook for 30 minutes. Season with chopped herbs. You can blender the soup. Optionally: enrich with fresh cream.

Amaranth with mushrooms

 INGRIDIENTS:
40 dag cooked amaranth
30 dag of any  mushrooms
1 onion
2 tablespoons oil
salt
pepper
parsley
3 cloves garlic
1 dl cream

 RECIPE
Saute onions in oil to yellow. Add chopped wild mushrooms, and saute a little more. Season with salt, pepper, parsley and garlic. Add cooked amaranth seeds and sweet cream. Serve with salad or as an side dish to the baked meat.
